For a daily dose of excitement, medieval jousting tournaments are held twice per day between the two walls--while this may sound like a typical touristy show, it's actually an entertaining display of combative competition and horsemanship.
Cathedrale Sainte-Cecile and Chateau Comtal will appeal to history buffs. Step off the beaten path and head to Tours et Remparts d'Aigues-Mortes and Eglise Saint-Nazaire. Venture out of the city with trips to Narbonne (Abbaye de Fontfroide, Cathedrale St-Just, &more), Albi (Musee Toulouse-Lautrec & Les Jardins de la Berbie) and Chateau la Voulte Gasparets (in Boutenac). There's still lots to do: do a tasting at O'Vineyards, make a trip to Château de Salses, admire the landmark architecture of Paroisse Saint Nazaire, and pause for some serene contemplation at Carcassonne Cathedral.
