Our students are truly international, coming from 52 different countries to day. We don't train chefs but rather teach our local home cooking to those that like to conceive of new places through its food, wine and culture.

Silvestro Silvestori’s Awaiting Table is a fabulous food, wine, cooking, and cultural experience in Lecce, Italy in the Puglia region. It’s a perfect vacation for anyone of any age who is interested in food and wine. Silvestro is the best host who just wants his guests to be happy and to have a good vacation, so he tweaks what he does to your interests. Nevertheless, he knows his audience and has his repertoire perfected. So just sit back, let him take care of everything, and enjoy the ride. I did the weeklong course in which we cooked 1-2 times a day, shopped in the local produce market, and fish market, etc. I learned to make several kinds of pasta, several different sauces, to cook vegetables in new ways, and to cook fish and shellfish. All recipes are very doable for the home cook. In addition, Silvestro has a vast knowledge of wine and teaches a great deal about it. Silvestro also gives you a good feel for the town so you know what you’d like to do if you have extra days in Lecce. One day is field trip day (we went to Oltranto plus some other personalized places along the way), which was a super fun day. I enjoyed meeting the other people in the class. The dinners and endless wine last as long as you’d like into the night in a fun atmosphere. Highly recommend.
My partner and I signed up for a week long course on Southern Italian wines. Our group was small and fluid (not everyone was there for the week) which meant that Silvestro was able to adapt the flow and content of the course to suit the needs and interests of the group on any given day. Not only did we learn about the wines of southern Italy, we shopped for fresh produce at the market, learnt how to make pasta and how to prepare dishes from local, seasonal ingredients, visited a nearby winery, and had a picnic lunch in the beautiful seaside town of Otranto. Along the way we met a steady stream of interesting people, ate copious amounts of the most delicious food (some of it prepared by us) and drank way more wine than our doctors would approve of. Given our interest in wine (we both work in the wine trade) Sivestro even went to the trouble of organising a trip to several of the local wine stores in Lecce for us. And on top of all this, he and his team were more than happy to let us practice our rudimentary Italian skills on them - I now know the importance of pronouncing both 'n's when ordering penne! Whether you are interested in food, wine, the history of the Salento, or are just looking for something different to do during your stay, I can highly recommend The Awaiting Table. Between them, Sivestro, Desi and Anna will ensure you leave with lasting memories...and maybe a few extra kilos/pounds around your girth.
